Treats for the folks in the office

Another online shopping mishap meant that I had an unfeasibly large amount of desiccated coconut to deal with. I remembered that in the El Bulli book I have talked about before, there was a recipe for coconut macaroons, so I decided that I’d give those a try. It’s been a while since I’ve taken treats into work, so I took them on a trip along the Northern Line yesterday. I sent the email saying there were macaroons “in the usual place”, sat down for a moment then turned round to see this:

The picture sort of speaks for itself, but I had some lovely comments too (“It’s like an angel dancing on my tongue”, “little clouds of coconut”) and a request for the recipe, so I clearly made the right decision. A little secret: they’re a bit messy to make but easy. Have the confidence to take them out of the oven while they’re still a bit sticky. As I’ve already typed the recipe out for a chum at work, here it is.

200g dessicated coconut
200g sugar
2 eggs

Pre-heat the oven to 180º, line a baking tray with baking parchment.
Mix the coconut and sugar in a bowl.
Whisk the eggs up in another bowl.
Stir the eggs into the dry ingredients. Mix with your bare hands.
Shape into little balls using a teaspoon or your hands.
Bake for about 12 minutes.

As I’ve mentioned before, the book gives quantities for 2, 6, 20 or 75 people. This is allegedly for 6 people and made about 30 macaroons. That’s a lot per person in my opinion.

Very much looking forward to finding an excuse to try out a recipe for 75 people!
