A strange but oddly irresistible cake
I can’t quite decide whether I like the apple cake or not. The taste is great, but the texture is a bit odd. Slightly chewy. I have been nibbling at it on and off all morning to try to work out what I think of it. So didn’t really need much lunch. Waiting for feedback from the lovely J who child cared Missy B last night for me. Anyway, here’s the recipe, in case you want to give it a whirl:

I love it when I make something different for Missy B and she asks for it again. It’s totally unpredictable, but this time it was a turkey Waldorf salad, courtesy of the Waitrose magazine. Although it was actually chicken, as that’s what was in the freezer.
Apples, celery, griddled chicken – it’s so healthy!!!! And it’s delicious. And it keeps crispy in the fridge for at least one night. And I really like it too. It’s perfect. Shame the cold weather seems to be upon us and I should be turning my attention to soups and stews.
I can verify that this is a hit with Missy B as when we were having pizza at Marine Ices the other day she proposed that I have this for my wedding breakfast as a starter. She is planning my wedding even though I’ve only been going out with the guy for 5.5 months!
PS – I can also confirm that the Swedish Apple Cake was strange but oddly irresistible. I liked it.
